Papa’s Banana Bread

So excited to be sharing my Papa’s banana bread recipe! I’ve tweaked it a bit to make it a little healthier, but the taste is just as delicious as when he would make it for us. I’ve substituted coconut sugar and coconut oil for the cane sugar and shortening. I’ll be making a post talking about the benefits of using coconut sugar and coconut oil in your recipes!

My Papa was by far one of my favorite people, so I’m excited to be able to share a piece of him with all of you. Food is such a great way to bring people together, and to remember those that we’ve lost. I hope your family enjoys this banana bread as much as my family does!

Papa’s Banana Bread

Deliciously, healthy banana bread! Quick to prep, and less than 10 ingredients! See tips below video.

Ingredients

  • 1/4 cup coconut oil (not melted)

  • 1 t salt

  • 1 cup coconut sugar

  • 2 eggs

  • 1 ½ cups flour

  • 1 tsp baking soda

  • 3 bananas, mashed

Directions

  • Preheat oven to 350
  • Cream together the coconut oil, salt, and coconut sugar in a mixer
  • Add eggs 1 at a time
  • Add baking soda. Then add flour and bananas, alternating ½ cup at a time
  • Pour into greased bread pan
  • Cook in 350 oven for 50-60 minutes, or until knife comes out clean. Let cool for a few minutes before transferring to a wire rack to finish cooling, Enjoy!

Notes

  • – To make vegan: use flax eggs instead of regular eggs (1 flax egg = 1T flaxseed and 2.5T water)
    – If you don’t have coconut sugar you can use regular cane sugar (1:1 sub), if you don’t have coconut oil you can use shortening or butter (1:1 sub).
    – The bananas give a lot of flavor, but you can taste a little of the coconut. If you don’t want to have any coconut taste, use refined coconut oil (mostly flavorless). Most coconut oil you see at the store is unrefined.
    – Feel free to add in nuts or chocolate chips!

    I made this recipe with my granddaughters, and we had such fun. We all enjoyed it. Truly delicious! Easy. They love to have tea, went well with it. Will now make with my new Great Granddaughter, Lucy!!
