There are some nights where I just crave meatloaf and mashed potatoes! This recipe is so quick and easy, and the ketchup makes it Peter approved (aka even the kids will love it).
This recipe uses ground beef and ground turkey together which I think gives it a great flavor and makes it a little healthier. You can quickly make this up for dinner one night or you can cut up to put in meal prep containers! Add it on top of some mashed potatoes and you’ll have a delicious lunch.

Ingredients
1 lb ground beef
1 lb ground turkey
2 eggs
3/4 cup bread crumbs
3 T milk
3 T ketchup
1 tsp Worcestershire sauce
1 tsp mustard
2 tsp Italian seasoning
1/4 tsp salt
- Glaze Topping:
½-3/4 cup ketchup
2 T light brown sugar
Directions
- Preheat oven to 375. Line a bread pan with parchment paper, leaving some overhang on the sides (you will use this to take the meatloaf out of the pan).
- Place all ingredients in a medium size bowl. Using your hands, mix the ingredients together.
- Place meatloaf in the loaf pan, pressing down with your fingers to flatten.
- Cook in oven for 40 minutes. While cooking, mix together the glaze ingredients in small bowl.
- Take out of oven, and use spoon to spread the glaze on top of meatloaf (use as little or as much as you want).
- Cook for another 15-20 minutes. Take out of oven, let sit for 5 minutes. Use parchment paper overhang to lift meatloaf out of pan and place on platter. Cut and serve!

- If you want a little zest, use chili sauce instead of ketchup for the glaze
- If you think the meatloaf is a little too liquidy as you’re mixing it, you can always add more bread crumbs
- If you don’t have parchment paper, you can always keep the meatloaf in the pan and just cut it out in slices in the pan
- I love to add grated carrot in mine, you could also add diced onion or peppers
