Who doesn’t love a dump and bake recipe? While the noodles need be precooked, the recipe itself is so easy and quick you’ll have dinner on the table in no time. And with almost no dishes to clean!
My mom used to make tuna noodle casserole a lot, but as I no longer eat seafood, I wanted to try it out with chicken instead. This recipe is also made dairy free, and still comes out deliciously creamy. As this recipe fills up the whole casserole dish, you can also put it in meal prep containers for lunches for the week. Enjoy!
Chicken Noodle Casserole

Ingredients
12 oz bag of wide egg noodles*
8 oz bag of frozen mixed veggies
3 cups cooked and shredded (or cubed) chicken*
1 cup dairy free sour cream
½ cup dairy free shredded mozzarella cheese
1 3/4 cup dairy free milk
1/4 tsp pepper
½ tsp salt
½ tsp Italian seasoning
½ cup panko bread crumbs
Ritz crackers for topping (optional)
Directions
- Preheat oven to 350°F. Grease a 9×13 inch baking dish.
- Bring a large pot of water to boil. Cook noodles according to package. Drain and return to pot.
- Add all other ingredients, except for the bread crumbs), to the noodles. Mix.
- Transfer the noodle mixture to the baking dish. Cover with tinfoil, and bake for 10 minutes.
- Uncover, and stir the mixture. Sprinkle with the bread crumbs and bake uncovered for 10-15 minutes (or until noodles are warm).
- Sprinkle crushed up ritz crackers on each individual serving (optional) and enjoy!
Notes
- If you don’t have or don’t like egg noodles, you can use any time of pasta. But I think egg noodles work the best with this dish! If you are dairy free, just be mindful that some egg noodles are not df
- While you could cook chicken in advance, I just buy it pre-cooked. You can use a rotisserie chicken, or most stores have pre-cooked chicken cut up in packages. Target has a great shredded chicken option near their meat section (which equals out to 3 cups), and Trader Joes also has great pre-cooked chicken options.
- If you’re nervous about the pasta drying out, when baking uncovered take it out of the oven after 5 minutes and stir it again before returning to oven.
- If taking for a meal-prepped lunch, take the ritz crackers with you in a baggie so they don’t get soggy.

Hi Sarah….just wanted you to know that I made this recipe and it was delicious. It heated up really nicely for lunches but I am glad you mentioned bringing the ritz crackers to sprinkle over after reheating. It added a tasty crunch to the casserole. Thanks!
