Another simple 5 ingredient meal! I love caprese! The balsamic glaze on top makes this recipe even more perfect. This recipe is already gluten free, and if you’re feeling adventurous you can even make your own pesto!

minutesDeliciously easy chicken caprese. The balsamic glaze mixes so well with the pesto, cheese and tomato. This recipe is ready in 20 minutes!
Ingredients
1-1.5 lb thin-sliced chicken breast
7 oz basil pesto
1/2 cup shredded mozzarella cheese
1 large tomato, thinly sliced and halved
Balsamic glaze
Directions
- Preheat oven to 375ºF
- Line a baking sheet with tin foil, and spray lightly with olive oil spray. Place chicken breasts on baking sheet.
- Use a spoon to spread pesto over the top of each chicken breast.
- Bake in oven for 15 minutes. The pan will get very oily so be careful taking it out of the oven!*
- After 15 minutes, take pan out of oven and add 2-3 halved slices of tomato on top of each piece. Then sprinkle mozzarella cheese on top. Bake for another 5 minutes or until chicken reaches 165º.
- Place chicken on serving plate, and drizzle balsamic glaze on top. Enjoy!
Notes
- If you’re worried about the pan becoming too oily, you can place a cooling rack on top of your baking sheet and lay chicken on top of that. The oil will seep to the bottom of the pan but your chicken will be elevated above it!
- Dairy free: use dairy free mozzarella or omit cheese
- If you want a true chicken caprese, add some basil leaves on top!
