Enchilada Stuffed Sweet Potatoes

These are definitely a favorite in our house. Such a fun twist to tacos or enchiladas! These stuffed sweet potatoes come together in 25 minutes, and are gluten free! On top of that, this dinner is only 5 ingredients (with optional toppings).

Sweet potatoes are so good for you! I’ll be honest though, I am not a huge fan of sweet potatoes on their own. So this is a great way for me to enjoy them and their nutritional benefits. Sweet potatoes are an excellent source of fiber and antioxidants. Fiber-rich foods benefit your gut and digestive health, and regulate blood sugar levels! It also is a great source for a variety of vitamins and minerals including Vitamin A (for eye health), vitamin C, and potassium.

You may also notice I use ground turkey in a lot of my recipes. However, I do try and find a good balance between the two. Ground turkey is typically leaner and lower in fat than ground beef. However, ground beef contains more protein and iron. With this recipe, I used black beans which are high in protein (15 grams per cup). So, if I already have a great protein source in my meal, I may use ground turkey for the lower fat content!

Enchilada Stuffed Sweet Potatoes

These delicious stuffed sweet potatoes are the perfect easy, healthy meal for a week day dinner!

Ingredients

  • 4 sweet potatoes; baked**

  • 1 lb ground turkey

  • 15oz can of black beans

  • 1 ½ cups of frozen corn

  • 1 1/4 cups enchilada sauce

  • Optional Toppings: Sour cream, guacamole or avocado, shredded cheese

Directions

  • Heat up a large frying pan over medium heat. Add ground turkey and cook until done. Drain.
  • Return turkey to frying pan. Add black beans, corn, and enchilada sauce. Cover and reduce heat to low to simmer for 10 minutes.
  • While that’s simmering you can prep your sweet potatoes. Cut in half lengthwise and scoop out a portion of the middle of each half. You should now have a “boat” to put your filling into.
  • Once turkey mixture is done, using a spoon add mixture into sweet potato boats. Add any optional toppings and enjoy!!

Notes

  • I like to buy those individual sweet potatoes that you can put in the microwave as baking them can take so long. But feel free to also bake them in the oven (use fork to poke holes into potato, and bake at 450°F for 40-50 minutes, or until soft inside when pierced with a fork).
  • You can also use ground beef or ground chicken for this recipe!
