Why black beans?

I have been fascinated by black bean brownies since the first time I heard about them. How could black beans make delicious brownies? Somehow, the magic of these brownies leave you with a delicious treat and delicious health benefits.

Black beans are a great source of fiber and protein. It also creates brownies that are gluten free and easily made vegan. It is a great way to get some extra health benefits out of your desserts.

I tested these brownies by both telling some people they were made with black beans, and then not telling some people what they were made out of. I am happy to report that both sets of parties enjoyed these brownies, regardless of their knowledge as to its contents.

These brownies are a bit trickier to make, as they consistency right out of the oven is a bit of a goopy mess. I pop mine in the fridge overnight, and they firm right up and taste like true fudge brownies. I hope you end up enjoying these as much as we did and have a fun treat to bring to your next party!

Fudgy Black Bean Brownies

Fudgy brownies made with black beans make this delicious dessert gluten free and easily made vegan.

Ingredients

  • 15oz can of black beans, washed and drained

  • ½ cup rolled oats

  • 2 T cocoa powder

  • Pinch of salt

  • 1/3 cup honey (or maple syrup)

  • 1/4 cup coconut oil, melted

  • 2 tsp vanilla extract

  • ½ tsp baking powder

  • ½ cup chocolate chips (for batter); an extra handful to put on top (optional)

  • ½ cup chopped walnuts

Directions

  • Preheat oven to 350°F and set aside a greased 8×8 baking dish.
  • Using a large food processor, add all ingredients except for chocolate chips and walnuts.
  • Blend well in food processor. Once blended, stir with a spoon and then mix blend again.
  • Using a spatula, fold in chocolate chips and walnuts into batter.
  • Add batter into baking pan. Sprinkle extra chocolate chips on top (optional).
  • Bake for 18-20 minutes. Let cool for 10 minutes and then cut into pieces. Leave cut pieces in dish and cover with tin foil. Place in fridge overnight to let the brownies firm up. Enjoy!

Notes

  • Vegan: use maple syrup instead of honey or use white sugar, make sure chocolate chips are dairy free
  • You can use a blender for this recipe, but it blends a lot better in a food processor
  • Feel free to take the walnuts out if you want a nut-free dessert, I just like the walnuts to give the brownies some texture.
