Healthier Chocolate Chip Oatmeal Cookies

Healthier Chocolate Chip Oatmeal Cookies (V, DF)

Makes just over 2 dozen cookies

Ingredients:

  • 1 flax egg (1 TB flaxseed, 2.5 TB water….see Tips section for details)
  • 1/4 cup coconut oil, melted
  • 1/4 cup applesauce
  • ½ cup coconut sugar (or regular white granulated sugar)
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1 ½ cup rolled oats
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ – 3/4 cup chocolate chips (use df chocolate chips if making vegan)

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix together wet ingredients (flax egg, coconut milk, applesauce, sugar and vanilla extract) in a small mixing bowl. Set aside.
  3. Mix together dry ingredients (flour, rolled oats, baking soda, and baking powder) in a medium mixing bowl.
  4. Mix wet ingredients into dry ingredients. Fold in your chocolate chips.
  5. On a baking sheet with parchment paper, drop a spoonful of cookie dough onto sheet. Press down with back of spoon or using your fingers to make a cookie shape. Repeat until all dough is placed.
  6. Bake for 11-12 minutes. Cool for 2 minutes before placing on cooling rack. Enjoy!

Tips:

  • Flax egg is a great vegan alternative to a regular egg. It is made with water and flaxseed meal. Once mixed together in a small bowl, let it sit for at least 5 minutes to thicken before adding to your mixing bowl. You can also use chia seed or a flaxseed/chia seed mix
  • My favorite brand of dairy-free chocolate chips is Enjoy Life
  • Coconut oil is a great ingredient to keep in your baking cabinet! It’s a perfect alternative to butter.
  • Apple sauce is also a great alternative to oil or butter (fat-replacer). Simply put, it is high in all the good stuff and low in all the bad stuff.
  • Coconut sugar is plant-based and minimally processed. There are some health benefits as well, and some people think it is better for your gut health as it digests slower in your body. If you don’t have coconut sugar on hand, you can always use regular sugar.
  • Feel free to omit the chocolate chips or add in other ingredients such as raisins or nuts.
