Where are all my meal prep people at? A deliciously easy pasta salad inspired by Italian flavors. I was fortunate enough to spend a semester abroad in Italy in 2016. While the food I make is never the same as the amazing food I had in Italy, I always try to throw a little Italian in when I can.
One of our favorite meals to partake in was the Apéritif! Delicious before dinner cocktails with amazing charcuterie foods. Salami, prosciutto, so many types of cheeses, and fritto misto. My village was known for their fried stuffed olives!
Having this pasta salad takes me back to some of the delicious flavors and amazing times I had in Italy. I hope it can also transport you to a balcony overlooking the Mediterranean. And the best part: you’ll have lunches for the whole week!

Italian Tortellini Salad

Ingredients
19 oz frozen tortellini*
1-2 T olive oil
1/4 cup Italian dressing
1 cup baby spinach*
12oz cherry tomatoes, sliced
10-12 salami pieces, chopped into fourths
1/4 cup freshly grated parmesan (optional)
Directions
- Bring a medium sized pot of water to a boil. Cook tortellini according to package. Drain and rinse with cold water.
- Place cooked pasta in a large mixing bowl. Add in olive oil and stir. Cover and place in refrigerator for at least 30 minutes.
- While the tortellini is in the fridge, you can prep the other ingredients.
- Add all ingredients to the chilled pasta. Stir.
- If meal prepping, place in individual containers and put in fridge for up to 5 days. Enjoy!
Notes
- Frozen tortellini comes in many different sizes, so don’t worry too much if your bag is a little less or more than 19 oz. I used cheese tortellini but you can use any flavor!
- I like to break off the stems from my baby spinach when I have it in a salad as I find it’s easier to eat. Feel free to experiment with that!
- To make dairy free: Find a vegan tortellini (such as Kite Hill; it is actually not too hard to find!) and either omit the cheese or use df parm.
- To make gluten free: use gluten free tortellini (whole foods has some!)
